Balsamic Vinegar

The tradition continues

The word Balsamic comes from the Latin word “Balsam” which means “something healthy for your body.” Over 2000 years ago, the Romans used balsamic vinegar as a sweet condiment and today, we are pleased to add a premium, aged Balsamic Vinegar from Italy. Our vinegar is a perfect companion to our super-premium extra virgin olive oil. Consisting of the finest blend of seven, local and regional grapes, from Modena, Italy, our balsamic vinegar is matured and aged in wood barrels. The result is a very rich and complex premium balsamic vinegar.

White Balsamic Vinegar:  made from the must of Trebbiano grapes and combined with wine vinegar, the results are a smooth, sweet-tart, golden vinegar with floral aromas, complex flavors and a balanced acidity.  Perfect for your everyday use in sauces, vineigrettes, salads, and grilled fish to give brightness and a gently sweet flavor to your dish.

Some fun history: Balsamic Vinegar of Modena PGI (Protected Geographic Indication)

Balsamic Vinegar of Modena is a very old and traditional product.  It originates in the specific area of Modena, in the Emilia Romagna region of Italy more than 2000 years ago.

The first “Balsamic discovery” was by the Romans (the first foodies and the first people to start using vinegar as a condiment).

 They had the practice to cook the grape juice so they could preserve it and use it as a sweet condiment (they called it Saba or Sapum). They discovered – only in the area of Modena – that a jar of this cooked grape juice (or cooked must) left unattended, turned sour.

Because of its climate conditions and the indigenous type of grapes (Lambrusco to name one) only the area around Modena (and nowhere else in Italy) made this fermentation occur.

They had the believe that this ‘sour cooked must’ was healthy and could make the water drinkable. This is important because it originated the name “Balsamic” from the Latin derivation of “Balsum” something healthy for your body.

Thousand of years after medical studies proves that all type of vinegars are actually providing several health benefits.

 Throughout history the production process was – almost secretly – pass from generation to generation.

 The production process starts every year in October with the grape harvest of the typical 7 varieties of grapes (some of them indigenous of the Modena area such Lambrusco), the mostly widely use are Lambrusco, Trebbiano and Sangiovese (so both red and white grapes).

Grapes are squeezed and the grape juice obtained is then cooked until it reaches a sweet and dense flavor and consistency. The Cooked Grape Must is then mix with aged wine vinegar and then aged in wooden barrels for the fermentation, refinement and aging process.

After a minimum of 60 days, but often aged for longer, the product is then certified by the Italian authorities and ready to be bottled.

 Balsamic Vinegar of Modena is a Protected Geographic Indication product: this unique certification is granted by the EU, only to those specialties which have territorial and hundreds, sometimes thousands, of year of history and traditions.

Balsamic Vinegar of Modena has a very particular taste and flavor: a good balsamic should have a balanced sweet and zesty taste, aromas of cooked fruit, raisin. The color is dark brown to black with shiny burgundy glares. For its particular taste and flavor Balsamic Vinegar of Modena is a very appreciated product worldwide: it’s in fact the most exported Italian specialty.

Our Sea Salt and Herb Mix

Most table salt is mined from below the ground using chemicals. Our sea salt is taken from the Adriatic sea and naturally dried in small basins, then it naturally whitens as it is dries in the Italian sun. The sea salt retains all of the minerals from the sea and is super delicious.

 

Produced by natural evaporation in the basins of the Adriatic Sea, our sea salt is rich in trace elements such as iodine, zinc, copper, magnesium, iron, calcium, and potassium.

 

Our Mom’s Special blend of herbs:  Oregano, Basil, Marjoram, Thyme, Parsley, Rosemary, Tarragon, Sage – a special blend that we bring to you. 

Homemade Pasta

Pasta – authentic Italian Pasta

     Pasta’s history can be traced through many cultures and continents, from Asia to Africa to the Middle East, reaching back at least 3500 years. Today, Pasta is highly associated with Italy and is a staple in the Mediterranean diet, along with its premium extra virgin olive oil.

     Our pasta is renowned for the rigorous production and selection of raw materials and was born in the marvelous and uncontaminated hills of Campania on the one and only local farm land. The durum wheat is grown without the use of chemical fertilizers or pesticides or additives and is not enriched in any way. 

     Harvested and sowed naturally on the farm, this durum wheat is known to retain particular characteristics, such as a high protein value, which is fundamental for the pasta to hold well during cooking. It has a very tenacious and highly digestible gluten which gives it a light non filling sense and is simply delicious.
